Geoffrey Zakarian asks the competing chefs to impress him with just one bite and to make a roast chicken and side dish in their own style.

The six chefs must show Geoffrey Zakarian that they know what makes a profitable dish. Then they have to present their full restaurant concept.

Geoffrey Zakarian asks the chefs to cook three dishes from their own menu and then use the leftovers in a special dish.

Geoffrey Zakarian evaluates the four chefs' recipes by attempting to cook their dishes. Then he tests their ability to adjust their menu for diners.

The final three chefs try running their own restaurant, but Geoffrey Zakarian tests them with a packed house of actors causing havoc.

Geoffrey Zakarian lets each of the final two chefs do a full restaurant takeover, setting up their restaurant with a full staff and real diners.
